Construction Grade Gingerbread

Ingredients
  

  • 2 C granulated sugar
  • 1/2 C honey
  • 1 TBS warm water
  • 4 eggs
  • 2 TBS ground ginger
  • 2 tsp cinnamon
  • 2 tsp cloves
  • 6 C flour

Method
 

  1. Preheat oven to 325 degrees F
  2. Pour sugar into mixer
  3. Heat honey in the microwave for 20-30 seconds, then pour onto sugar
  4. Mix until combined
  5. Add water and eggs
  6. Mix until combined, scraping the sides as you go
  7. Add ginger, cinnamon, and cloves
  8. Mix until combined, scraping the sides as you go
  9. Add flour one cup at a time
  10. Mix until smooth
  11. Switch your mixer to a dough hook and continue to mix
  12. Add more flour if needed, until the dough starts to separate itself from the sides of the bowl
  13. Remove dough from bowl and put into a gallon ziplock bag
  14. Refrigerate for an hour (optional but recommended)
  15. Flour the surface of a baking mat and start rolling the dough out
  16. Use a flour duster if it's sticky
  17. Roll until flat and cut out your gingerbread pieces
  18. Bake the pieces at 325 degrees F for 15-20 minutes, rolling the dough once after 10 minutes
  19. When the pieces are firm, remove them from the oven, lay them on a flat surface, then put the pan on top of them so they cool nice and flat
  20. Build and decorate!
